Contact us for a weekend of discovery of the eno-gastronomy of the Gargano: Orecchiette or "strascinate" as they are known locally are a typical Puglian pasta made in the shape of little ears using only Durum wheat flour, salt and water and traditionally served in the Gargano with a tomato ragu (with or without meat) and grated Cacio-ricotta cheese. ![]() Gargano Caciocavallo Podolico is made exclusively with milk from Podolico cows and only at certain times of the year. A tough breed they survive on poor pastures and little water which help give this noble cheese its inimitable character and flavour. ![]() San Severo red and rose wines are DOC certificated and are wines produced in the province of Foggia. Cacc’è mmitte is produced at the foot of the Daunian Appenines around Lucera, Troia and Biccari. Just some of the many local wines for you to discover.
